Umihara Kawase: What is that name?


Umihara Kawase is written as four kanji (Chinese characters):

  1. umi, meaning "sea".
  2. hara, meaning "belly".
  3. kawa, meaning "river".
  4. se, meaning "back".

There is a Japanese kitchen idiom: "Sea fishes are fat in the belly; river fishes are fat in the back." Umihara Kawase is an extraction of that idiom.

Shun means "in season", as in seasonal fish. As we know, many delicious fishes are seasonal.
